A slice of whisky and cherry banana bread

The whole world is making banana bread right now isn’t it? That and sourdough. We’re guilty of both in this house I’m afraid!

Dave’s been playing around a lot with his banana bread recipe and he might just have found something a little bit genius. The whiskey not only keeps the bread super moist, it also adds a subtle malty tang which is most welcome. As for the cherries – well they just add a pop of sweetness every few bites which is just heavenly! In fact, we’ve been buying bananas and letting them ripen just so we could test this recipe! Worth it though, to get something as yummy as this!! Go on, give it a try…

Whisky and cherry banana bread

Ingredients: 

  • 3 ripe bananas, mashed with a fork
  • 1 egg beaten egg
  • 115g butter
  • 225g flour
  • 150g sugar
  • 2 tbsp whisky
  • Pinch of ground clove
  • 1/4 tsp cinnamon
  • Pinch of grated nutmeg
  • 1/2 tsp bicarbonate of soda + 1/4 tsp lemon juice (or 1 tsp baking powder)
  • 8-10 glacier cherries roughly chopped

Method: 

  • Preheat your oven to 180c / gas mark 4.
  • Mix the egg, banana and whisky in one bowl and the dry ingredients plus butter and lemon juice (if using bicarb + lemon rather than baking powder) before combining in a large mixing bowl, using a wooden spoon until they are well combined with no lumps or bumps.
  • Grease a loaf pan and line it with greaseproof paper.
  • Pour the mixture into the loaf tin (ours is 24cm) and shake it a little from side to side so it’s level.
  • Bake for 45-60 minutes (depending on your oven) until the top is browned and cracked and a knife comes out clean

We eat our banana bread either as it comes (especially nice when still warm from the oven!) or with a dollop of ice-cream or even yoghurt. Best enjoyed in the garden with a nice cup of tea. If you make this, I’d love to see the finished banana bread! Share your pictures with me on instagram!
