Meal Planning MondayI love to plan ahead when it comes to our evening meals – in fact, if I want to be organised and avoid temptation, its a must. We both have busy full time jobs and a well planned menu is often the only way to avoid the call of the takeaway!

After recently coming across the wonderful ‘At Home with Mrs M’ blog via a fellow midlands blogger Jo’s Kitchen, I just had to join in the Meal Planning Monday fun. Its a great way to avoid wastage and ensure you eat healthily too. Plus, by looking at others meal plans, you can get some inspiration for your own along the way. No one wants to eat the same meals week in week out!


May is going to tight one for us after a series of birthdays including the mother in laws 60th, my step dads 50th, the hubbys and my nieces birthdays all falling in April!

So, after a quick stock check and a trip to the Co-op here’s my plan for the week:

Monday
Chicken breast wrapped in bacon, stuffing, boiled potatoes and veg

Tuesday
Smoked Salmon Linguine, with creme fraiche, lemon and peas

Wednesday
I’m at a friends for dinner so hubby can fend for himself!

Thursday
Chickpea curry and rice

Friday
Bacon and tomato pasta with salad

Saturday
Thai vegetable curry with pan fried sea bass

Sunday
We are at my Nanna’s for sunday dinner – it’ll be a roast & I’ve already put my request in for her amazing cauliflower cheese 🙂

It all looks very impressive listed above, I’m most pleased! I always try to vary what we eat, making sure we have fish and usually one vegetarian meal too. I make full use of my freezer too – you’ll always find at least peas, prawns, chicken and yorkie puds in there! I’m also a fan of batch cooking. For example, the chickpea curry is already made and frozen in a tupperware. I’ll get it out the freezer on thursday morning and reheat in a pan. Quick and easy!

  1. Oh wow! Sounds lovely. The chicken wrapped in bacon is a favorite of mine as well. I would love to try the pasta and bacon dish, not something i have tried before.

  2. Thanks Angeline, the bacon & tomato pasta is so simple, fry an onion and garlic, add snipped up smoky bacon and fry til crispy. Add tinned toms and dried thyme and allow to cook down. Serve with pasta and sprinkle with grated cheese and some torn basil leaves! Yummy and quick too 🙂
