Not a festive recipe, but one that you might enjoy to cut through all the richness at some point over the ‘twixmas’ period! Mum’s lime chicken tray bake is something I always ask my mum to make for me when I’m there for dinner.
It’s called ‘Mum’s limey chicken’ in our house although it originally came from my Cousin! She was very annoyed the first time I posted it to my instagram and messaged me straight away. Teehee. Wherever it came from, it’s a staple in our family. Plus, it’s super delicious and pretty healthy. The sauce is just so moreish, tangy but hearty.
You can serve it as it comes, with roasted carrots (my fave!) or just a pile of crusty bread to mop up the sauce. Note, if you don’t have bouillon powder, get yourself some! It’s sold at most big supermarkets and is a game changer. If you don’t have it, a stock cube will do the trick though.
Here’s the recipe so you can give it a go:
Ingredients (serves 2)
- 2 small red onions, cut into chunks
- 1 large red pepper, cut into chunks
- 300 g small potatoes, halved
- 4 boneless/skinless chicken thighs or 2 big chicken breasts
- 3 garlic cloves, crushed (there’s no such thing as too much garlic in our house!)
- 200g tender-stem broccoli
- 1 lime (zest and juice)
- 1 tsp smoked paprika
- 1 tsp thyme (fresh or dried)
- 2 tsp bouillon powder.
Recipe
- Heat the oven to 200c
- Toss the potatoes, onions and peppers in oil and season with salt and pepper
- Roast them in the oven on a wide tray for 15 minutes
- Whilst they’re roasting, rub the chicken with the garlic, paprika, thyme and lime zest.
- Add the chicken amongst the veg and roast for 40 mins
- 10 mins from the end, mix the bouillon with 200ml water and add to the tray with the tender-stem broccoli
- Cover with foil and cook for final 1o mins or until the broccoli is tender.
This lime chicken tray bake recipe is pretty faffy to make but worth the effort and not too much washing up! Anyway, I love it and hope you will too!
