After a weekend of excessive eating and drinking, I wanted something quick and healthy for dinner tonight. After a rummage in the freezer and fridge, I (sort of) had the ingredients for this Cod with tomato and chorizo recipe from the BBC Good Food website.
- Olive oil
- 1 garlic clove, sliced
- 4 thin slices chorizo cut into matchsticks
- Pinch chilli flakes
- 400g tin chopped tomatoes
- 2 thick cod fillets or other sustainable white fish
Method:
- Heat 1 tbsp olive oil in a pan then cook the garlic and chorizo for a few minutes.
- Add the chilli and tomatoes and simmer for 10 minutes until thickened, season.
- Meanwhile rub the fish with a little more oil, season and grill or steam until cooked through, about 4-6 minutes.
- Serve the fish with the sauce and accompaniments.
The recipe calls for green beans to serve but I opted for something a little more substantial – crushed new potatoes and wilted spinach (and a bit of broccoli I found in the fridge!). It’s very quick and easy to make and tastes delicious, just make sure you really let the tomatoes simmer down so that most of the liquid evaporates off. Rather than chilli flakes, I used a dash of Wigawagaa Chilli Sauce . I’m waiting for the day when Wigawagaa sauces come to the Midlands, sadly they are only available in and around Newcastle at the moment.
