Credit Crunch Munch – May 2014 Round Up

As you may know if you read my blog frequently, during May, Camilla from Fab Food 4 All and Helen from Fuss Free Flavours very bravely trusted me with their brilliant blogger link up Credit Crunch Munch. I was pleased to see so many entries coming in and even more pleased to see an abundance of chocolate cake! Have a look here to see all the great recipes entered. My final duty as guest host is to do the round up. Thank you to everyone who entered, I’ve bookmarked some very tasty and purse friendly recipes and hope you have too!

So here we go… 

 

First up we have a lovely chocolate cake from Utterly Scrummy  and at less than £1 to make, its both tasty & budget friendly! How gooey does that look? I want to LICK THE SCREEN!

 

Next was a delicious looking courgette quiche from Real Food Fans – this recipe is perfect for using up a glut of courgettes! This blog is also new to me and I’ll be reading from now on!

Ok.. here’s the start of this months theme – more chocolate cake, this time a chilli chocolate loaf which looks great from the cleverly titled  ‘I’d Much Rather Bake Than….’

 

 

Another chocolate cake entry from the wonderful and totally credit crunched Chocolate Log Blog. I was lucky to hear Choclette talk at Blog Camp earlier this year, she’s a fab blogger, one of my faves!

Next we have a great use for leftovers with a tasty looking mangetout, blue cheese and hazelnut open sandwich. Thanks Vohn – another blog which is new to me and one I’ll be following!

An entry from Camilla at Fab Food 4 All, one half of the Credit Crunch Munch dream team. This quiche lorraine looks really yummy – plus puff pastry & value gammon make it go a long way!

This apricot bakewell traybake from The Baking Explorer earns extra brownie points because not only does it use lots of budget friendly store cupboard ingredients, this fine example was also sold to raise money for charity!
The More than Occasional Baker brought us a lovely looking salmon and asparagus quiche, perfect for a picnic and perfect for left overs!
Now for something beautifully simple. Another favourite blogger of mine, Tinned Tomatoes entered this 5 minute green smoothie soup using frozen veggies to keep costs to just 20p a serving!

Time for breakfast with a lovely muesli full of cupboard odds and ends but still luxurious and looking full of flavour from Onions and Paper
I love the story around these chicken nuggets from Elizabeth’s Kitchen Diary – she road tested some traditional Scottish sauces from Mrs Broons alongside the nuggets and it all looks great.

Now a really rich and tasty looking braised oxtail and smoked bacon stew from Bangers and Mash  – such a fantastic and under used cut of meat and light on the purse strings too!

How exciting that the next entry came all the way from New Zealand0 Thank you The Kitchenmaid! A very healthy looking just add water soup full of  veggies and a great waste not want not way of getting every last bit off that chicken carcass.

Time to head back to chocolate with this chocolate fudge cake from Tales from the Kitchen Shed. Another recipe costed right down to just £1 – I’m impressed!

Hold onto your horses – here comes more! Another £1 chocolate cake made by Caroline Makes…  also entered into Chocolate Log Blogs challenge for May, all these £1 chocolate cake recipes are helping support and promote the Live Below the Line campaign.

I love the sound of this chocolate, banana and peanut butter cake from The More than Occasional Baker – again, promoting Live Below the Line and costing just £1 to make!

Allotment 2 Table brings us a lovely looking chocolate ginger cake, again for just £1 and also vegan! Her blog promotes grow your own and is full of vegan and vegetarian recipes!

We move temporarily away from chocolate cake with these oaty banana and raisin bites, entered by Searching for Spice – another new blog now on my radar thanks to Credit Crunch Munch!

Next we have another far flung entry, this time from The Taste Space,a Canadian living in Texas! These chocolate chickpea flour and chocolate tofu frosted cupcakes look surprisingly tasty and of course, are budget friendly and also vegan friendly.

This entry from a favourite blog of mine Leeks & Limoni takes us back into familiar territory with a £1 chocolate syrup cake. It looks delicious, do I need to say any more?

Here’s another entry from Bangers and Mash – a spicy cottage pie full of Indian influences. Lentils as we all know, are perfect for this challenge – filling, tasty and cheap!

We’re back in the USA now with these interesting looking guacamole hush puppies. They are basically deep fried cornmeal fritters and I think they’d work well with reduced price, nice and ripe, avocados! Thanks to Spices Galore.

Next up we’re a lot closer to home – its ME with a comforting meatball pasta bake using jarred peppers and beef mince to keep costs down!

I like this healthy mushroom soup from Feeding Boys and a Firefighter. Great for using up mushrooms and veg on the turn. A real frugal winner!

A late entry from The British Menu, fellow Midlands blogger and all round good egg! I am LOVING the look of this spicy chicken salad with mango and mint yogurt dressing, perfectly timed for summer.

And last but definitely not least, patatas bravas from We don’t eat anything with a face also from the Midlands and as the blog name suggests – vegetarian! These are cheap and easy to make and perfect for end of the month meals and camping!
