Roasted Squash with feta & chorizo

This is a great autumn recipe using Squash which is just coming into season now.  You can make this with any type of squash or even pumpkin I reckon. I tend to use standard butternut squash but you could experiment with some of the cool varieties around..

Simple and in Season Gingey Bites

This is very definitely comfort food, really easy to make, filling and really tasty, plus the colours on the plate look fantastic! After all, my mum always tells me ‘you eat with your eyes first’.

Ingredients: 

  • 1 medium squash
  •  Olive oil 
  • 1 onion, diced
  • 1 clove garlic, crushed
  • 100g feta cheese 
  • Chorizo – around a 1/3 of a cured sausage, diced
  • 1 red chilli 
  • A handful of mint leaves

Method:

  • Preheat oven to 200C/gas mark 6
  • Cut squash in half and remove seeds and throw them away. Then scoop out some of the flesh from the edges of the seed area and the long stem.
  • Drizzle the two halves of squash with olive oil and season then put in the oven for 40 minutes.
  • Fry the onion for a few mins then add the chorizo, garlic and chilli and fry for a further few minutes until the chorizo is softened and the onions translucent.
  • Spoon the onion mixture into the squash halves and sprinkle with crumbled feta and mint. Season and put back into oven for 10 mins until feta is slightly golden and melted. 
  • Season with sea salt, black pepper and another sprinkling of fresh mint.
  • Serve with a simple green salad.
